【On Kee Classroom – Honey-Glazed Golden Oyster】

Every Lunar New Year, golden oysters are exceptionally plump and flavorful, making them an indispensable festive treat! But how can you cook them to perfection without wasting their premium quality? This time, On Kee Classroom is excited to feature star chef Paul Wong (Chef Paul), head chef of Yun Lai Hin, 🤗 to guide you in preparing a delicious Honey-Glazed Golden Oyster dish! (Psst… our editor tried it, and it’s absolutely delicious and super juicy!)

Ingredients (Serves 1 portion, approximately 3-4 people):

  • Golden oysters: Approximately 10 pieces
  • Lettuce: 1 small portion (for serving as a lettuce bed)
  • Tri-color bell peppers: Half of each color (diced into small pieces)
  • Ginger: 5 slices
  • Green onions: 5 stalks
  • Chicken powder: 2 teaspoons
  • Minced garlic: 2 teaspoons
  • Minced ginger: 2 teaspoons
  • Chopped green onion: 2 teaspoons
  • Oyster sauce: 3 tablespoons
  • Honey: 3 tablespoons
  • Soy sauce: 2 teaspoons
  • Sesame seeds: Appropriate amount (for garnish)
     

Preparation Method:

  1. Clean the Oysters: Rinse the golden oysters gently with clean water to remove impurities, then pat dry.
  2. Prepare the Broth: Bring approximately 800ml of water to a boil in a wok. Add oyster sauce, chicken powder, ginger slices, and green onions.
  3. Simmer the Oysters: Place the golden oysters in the wok and simmer over low heat for 15 minutes. Remove the oysters and let them air-dry for 2 hours.
  4. Fry the Oysters: Heat a wok until hot, add oil, and fry the oysters until both sides are golden brown. Remove and set aside.
  5. Stir-fry spices: Add more oil to the wok and stir-fry the minced garlic and chopped green onions until fragrant. Return the fried oysters to the wok.
  6. Glaze the Oysters: Drizzle honey and sprinkle light soy sauce over the oysters, tossing until they are glossy and the sauce has reduced to a dry, shiny coating.
  7. Assemble the Dish: Trim the lettuce into small pieces and arrange as a bed on a serving plate. Place the glazed golden oysters on top, then sprinkle with diced tri-color bell peppers and sesame seeds to finish.

This dish is now ready to serve, perfect for festive occasions or special gatherings!
